Ingredients

  • 4 x crabs
  • 1 med onion
  • 1/2 x red capsicum
  • 1/2 x green capsicum
  • 2 x spring onions
  • 1/2 c. oil
  • 3 tsp finely minced salted black beans
  • 1 tsp finely minced garlic
  • 1 tsp finely minced ginger
  • 1 tsp sugar
  • 1 Tbsp. light soy sauce
  • 1/3 c. water
  • 2 tsp cornflour Cut crabs in half then in half again. Crack large nippers with a mallet. De vein remove grey fibrous tissue, wash crabs.

Directions

  1. Cut the vegetables into 8 cm strips.
  2. Heat oil in wok.
  3. Cook the crab pcs in oil for 3 min.
  4. Drain crab on absorbent paper.
  5. Strain oil leaving 2 Tbsp. oil in wok.
  6. Stir fry black beans garlic and ginger in oil for 30 seconds.
  7. Add in sugar and vegetables.
  8. Stir fry for 2 min.
  9. Add in crab.
  10. Add in soy sauce and water mixed with cornflour.
  11. Cook till sauce thickens.
  12. Serves 4
