Ingredients

  • 1 15 oz. can yellow corn, drained
  • Main Cowboy Caviar:
  • 1 15 oz. can blackeyed peas, drained
  • 2/3 C chopped cilantro
  • 2/3 C chopped green onions
  • 1/2 C chopped tomatoes
  • 1-2 cubed avocados
  • Combine all ingredients in a bowl
  • Dressing:
  • 1/4 C olive oil
  • 1/4 C red wine vinegar
  • 2 garlic cloves, minced
  • 3/4 t salt
  • 1/8 t pepper
  • 1 t cumin

Directions

  1. Combine all ingredients from Cowboy Caviar in a bowl.
  2. Mix ingredients well from dressing in a seperate bowl. Pour over caviar. Serve with Scoops tortilla chips.
