Polenta Smothered in Lentils

Polenta Smothered in Lentils by Suzi

Beans and legumes are a staple of the vegetarian diet. Both contain large amounts of protein and are also high in dietary fiber. When mixed with grains they become a complete protein. I have made this particular lentil recipe for many years and usually eat it with brown rice. I decided to see how well the lentils would go…

Orange perfumed risotto

Orange perfumed risotto by Alida

A very straightforward dish. A light risotto with a delicate aroma of orange. You will use the zest as well as the juice so it would be best to use an organic orange.

White Veggie Lasagna

White Veggie Lasagna by Lazaro Cooks

Lasagna, in most of its incarnations, is one of my all time favorite foods. This particular one uses no tomato product, thus it’s white. White sauce pastas are commonly prepared with some variation of a Béchamel Sauce. That’s where my lasagna gets exciting. My white sauce is actually a cauliflower puree.

Stuffed Pasta Shells w Tomato Sauce

Stuffed Pasta Shells w Tomato Sauce by jason kim

I have been waiting a while to make these spinach filled pasta shells, but it sadly didn't turn out the way I envisioned. The kids and wife loved it (thankfully), but I think mixing everything in the food processor made the cheese filling too runny and definitely not the consistency I was hoping for. Next time, I will either blanch…

Eggplant Parmesan (Slow Cooker or Crockpot version)

Eggplant Parmesan (Slow Cooker or Crockpot version) by Salad Foodie

This recipe based on one from Allrecipes.com served 8 and was cooked in a 5-quart slow cooker. I cut the recipe in half for 4 servings (which is the recipe below.) It cooks well in a 2 1/2 to 3-quart slow cooker. Whichever size you make, I think you’ll like this easy-does it version of yummy Eggplant Parmesan! (Note:…

Pasta Primavera

Pasta Primavera by Gretchen Wasniewski

A healthy vegetarian meal that is made in one skillet. It can be adapted to whatever leftover vegetables you have on hand or whatever fresh vegetables are in season. You can also customize this by using fresh herbs or the dry herb of your choice.

Asparagus risotto

Asparagus risotto by Alida

I find cooking asparagus in a risotto makes the dish particularly creamy. As for any risotto you have to add a nod of butter at the end. In Italy we call this "mantecare" which means stirring the butter into the risotto after it has been cooked. This will make it creamy and translucent and will add extra flavour.

Italian Rice and Beans

Italian Rice and Beans by Rich H

This is a nice rice and beans dish that is similar to risotto. It is rich and creamy. We've made the lacto-ovo vegetarian version but it can easily be adapted to vegan with some simple substitutions.
