Fiesta Chopped Salad by Salad FoodieI’m on a mission to find great new (to me) recipes using zucchini, and this perky salad was the first to be tried. A healthy colorful side salad, full of summer garden veggies with a refreshing light dressing. It meets my criteria for a “Keeper.” Score One! |

Warm Brussles Sprouts Salad with Almonds and Parmesan by Nancy MiyasakiI adapted this from a Oprah recipe. She makes the salad with raw brussel sprouts. I couldn't quite trust that, so I blanched them lightly before slicing. This produced a delcious and slightly warm salad. I should have tried some raw and some cooked to see which method is best. Maybe one of you can do that and let us know? |

Cucumber Vinegar Salad by CarolinaheartstringsThis was a favorite summertime salad of my mine. I remember my mother making this on a regular basis with garden fresh cucumbers and onions. I put a little tweak on it and added a tomato. Delicious. |

Barley Salad Primavera by Rich HWe recently went with a "white salad" using only "white" or near white ingredients like barley, daikon, mushrooms, water chestnuts, etc. This barley salad is even better...and once again we can learn why color matters! |

Zucchini, Yellow Squash & Radish Salad by Salad FoodieSo colorful, light and refreshing, this goes over well at summer feeds, and helps use up your garden harvest. Make this in advance to allow a thorough chilling, about 2 hours. It's best served the day made. Sub any veggies you want for variations, or change to a main dish salad over pasta. Leftovers can top salad greens for yet… |
