Tabouli by JoanneThere isn't a side dish that offers a fresher taste than tabouli. The lemon, the parsley...they clean your mouth with garden fresh flavors. Healthy, filling and such a reward to have next to your favorite entree. |

Moroccan Beet Salad by John SpottiswoodThis is a classic beet salad. If you like beets, you're going to really enjoy this. My personal preference is to boil the beets as little as possible That way they still have a crunch to them but aren't as hard as raw beets. I think raw beets are perfectly delicious, and I don't like them soft, so I boil them just enough to soften… |

Warm Brussles Sprouts Salad with Almonds and Parmesan by Nancy MiyasakiI adapted this from a Oprah recipe. She makes the salad with raw brussel sprouts. I couldn't quite trust that, so I blanched them lightly before slicing. This produced a delcious and slightly warm salad. I should have tried some raw and some cooked to see which method is best. Maybe one of you can do that and let us know? |

Jean's Potato Salad by MichelineMy friend Jean makes one of the best potato salad I have tasted. She shared her recipe with me. Here is her easy, quick and tasty recipe. Great for a potluck. I have also modified it several times by adding: diced bacon, diced celery and diced sweet pickles. Both ways, it is delicious. |

Smashed Potato Salad with Escarole by Mark BittmanThe key to success here is to be generous with the olive oil, whose flavor takes mere potato and greens--whether escarole or any other strong-flavored green like radicchio, dandelion, endive, or chicory--from humble to sublime. This is perfect picnic food, with or without meat, cheese, or eggs (see variations). |

Sesame Noodle Salad by KarenA cold noodle salad with homemade peanut sauce. Great dish to bring to a summer potluck. Hearty enough to be an entree, but really just a salad. For those who can not go without meat, 4 oz. of cooked chicken can always be added. |
