Mandarin Salad

Mandarin Salad by Nancy Miyasaki

This is one of my Mom's classic recipes. It is perfect for a large barbeque or pot luck. I talk it to a block party in San Carlos last night and it was GONE in about an hour. Very good flavors!

Orange Chipotle Vinaigrette

Orange Chipotle Vinaigrette by Bob Vincent

This recipe is adapted from one by Julie Campoy in her book Julienne. I made some changes to it. I added garlic, used more honey and reduced 50% more orange juice. I also added Mexican oregano and cut back on the cumin a bit. This produces a thin vinaigrette. If you want it thicker whisk in a couple of tablespoons of mayonnaise.…

Romaine Salad with Lemon-Parmesan Dressing

Romaine Salad with Lemon-Parmesan Dressing by Nancy Miyasaki

A simple but fantastic salad with a very nice dressing. Oil-packed sun-dried tomatoes add depth and flavor to this salad. We all really enjoyed this. Another amazing dish from my good friend Marci Chan!

Think outside the box for your next slaw with this creamy deep red cabbage version. The dried cranberries are camouflaged by the cabbage color and provide a pleasant sweet taste surprise, while walnuts add extra crunch.

BLT Pasta Salad

The popular combo of bacon, lettuce and tomato stars in this crowd-pleasing pasta salad. Instead of chopping the cooked bacon, try cutting it with kitchen scissors for thin, even pieces.

Warm Brussles Sprouts Salad with Almonds and Parmesan

Warm Brussles Sprouts Salad with Almonds and Parmesan by Nancy Miyasaki

I adapted this from a Oprah recipe. She makes the salad with raw brussel sprouts. I couldn't quite trust that, so I blanched them lightly before slicing. This produced a delcious and slightly warm salad. I should have tried some raw and some cooked to see which method is best. Maybe one of you can do that and let us know?
