Spaetzle by John SpottiswoodThis is a simple and delicious recipe for Spaetzle. My friend Helmut normally does not add oil to his Spaetzle, but we did last night because it said to on the recipe on our Spaetzle maker. I think it helped make the dough slightly easier to work with and less sticky. Feel free to do without if you prefer. |

Dolcelatte & Red Bell Pepper Fusilli by Ramón FarrugiaThis must be one of tastiest pasta sauces we ever made. The kitchen is still smelling good right this minute. The flavour that balsamic vinegar gives to this sauce is just incomparable. Cheese Tortellini with Purple Sage and Browned Butter by K. GarnerMy family loves this dish. It's a classic and uses an herb that grows year after year in my yard--purple sage. Any culinary sage will do--the ones with the large velvety leaves. Don't use Russian sage or Pineapple Sage. Stick with the basic sages. We like short pasta with this, and often use Orecchiete or Bow Tie pasta. You've got to… |
