Grilled Salmon with Tomatoes and Cilantro Sauce

Grilled Salmon with Tomatoes and Cilantro Sauce by Salad Foodie

A dear friend prepared this for us and it's become our prized way of enjoying salmon fillets. She calls it Salmon Supreme, but I call it Salmon Divine! Tomatoes, onion, garlic and cilantro cook down to make the savory sauce for grilled salmon. Serve atop your choice of rice or pasta and add a side of bright vegetables or salad.

A simple recipe that has only one true rule to be sucessful, and that is don’t rush the cooking. You can use either a salmon steak or a filet, the filet sometimes is a little hard to turn but if your careful will work just fine.

Panko Crusted Baked Tilapia

Panko Crusted Baked Tilapia by Salad Foodie

So I didn't find a recipe I liked for this and had to bungle my way through it alone. But it turned out pretty darned good! Nice crispy crunch, and baked without using a batter of egg or milk. If you have an alternative way please share!

There were five of us, and the recipe using one can (then 16 ounces) made 5 patties. This version is close to Mom’s, but overtime I tweaked it to my liking. It’s…

Tilapia with Sweet Peppers

Tilapia with Sweet Peppers by Salad Foodie

I like the speed with which I can get a seafood dish from pan to table. Only 15 minutes of cooking makes this tilapia main dish perfect for hurried meal times. Add rice or other grain as a side, plus a salad, and ...... ring the dinner bell!

Halibut Over Wilted Escarole

Halibut Over Wilted Escarole by JoannE.

Escarole has broad leaves and is less bitter then other members of the endive family. Despite the difference in appearance, it has almost the same taste as radicchio. High in folic acid, fiber, and vitamins A and K it thrives in the fall growing season *Sea Bass, Salmon or Tilapia can easily be substitute for halibut. The same 8…
