Maruya (Banana Fritters)

Maruya (Banana Fritters) by ShaleeDP

This is much liked by kids. I have seen my friends as a kid enjoyed this while we play outside. Normally it is a 'quick snack' that is easily fixed at home.

Ensaladang Manggang Hilaw (Green Mango Enchilada) by ShaleeDP

This side dish is one of my favorites. I make this whenever I have the right green mango that I could find. Even my family and friends learned to enjoy this too!

Achara

Achara by ShaleeDP

Is a pickled green papaya fruit that has a sweet-sour taste. Very nice to eat with fried fish, or grilled meat. My version of achara is very finely grated compared to the commercial ones. The sweet-sour tang is much tasty too!

ENSALADANG MANGGA (Green Mango Salad)

ENSALADANG MANGGA (Green Mango Salad) by Lidy Concepcion

Ensaladang Mangga is usually prepared as a side dish for any thing grilled or fried. It goes perfectly well with Shrimp paste or Bagoong. Salted egg can be added optionally. In this case we added ground chicharron (a dish made of fried pork rinds).

Asian Ginger Apricot Sauce/Glaze by Bob Vincent

This recipe is adapted from one by Julie Campoy in her book Julienne. The original called for more Asian chili garlic sauce which is very spicy. Since my wife doesn't care for really hot spices I cut back on it some. For me the more heat the better; but like they say--"Happy wife, happy life." This sauce is good on almost…
