Best Butterball Turkey and Gravy Ever

Best Butterball Turkey and Gravy Ever by myra byanka

A friend has an oven too small to cook a large turkey, so she gave me her 22 lb. Premium Butterball to cook. Since Butterballs come pre-basted with a saltwater solution, there's no need to brine or salt it. I decided to cook it on a low heat and it turned out fabulous.

Pear & Fig Chutney

Pear & Fig Chutney by Amos Miller

I still had a few pears from the orchard and the figs are almost finished. Why not a Pear & Fig chutney? Easily done! This is everything a chutney should be. The flavors of the pears, combined with the figs' texture and sweetness, the plump raisins and blend of vinegars easily marry to the aromatic spices. And a quality cracked…

Crisco's Pie Crust

Crisco's Pie Crust by myra byanka

Really good, flaky pie crust using shortening. Make this when you want a pie crust that has no sugar - desserts, quiches, pot pies, etc. I'm no pastry chef, and this recipe worked just great for me. The trick is to follow the directions. Keep ingredients cold (I freeze Crisco). Only work the dough enough to get it to hang…

Sourdough Bread (San Francisco Style - No Yeast Added)

Sourdough Bread (San Francisco Style - No Yeast Added) by myra byanka

If you're not a sourdough baker, what follows may be tedious. I know the yeasts my starter ("Wild Thing") caught in Texas are not the ones native to the Bay Area, but this bread tastes just as good. I employed the dough hooks on my recently purchased garage sale old Sunbeam Mixmaster, as the knead time is 10 minutes. This…

Cajun Crowder Beans

Cajun Crowder Beans by Amos Miller

Also known as Crowder peas, these delicious little fellas can often be found in frozen form at the store. These are fresh picked right here in Michigan and, like fava beans and so many other seasonal treats, we rush them to the table. Crowders are really a 'Southern' treat and I first enjoyed them when visiting relatives in West…

Homemade Kitchen Sink Drain Cleaner

Homemade Kitchen Sink Drain Cleaner by myra byanka

Basic recipe for unclogging your sink without using expensive commercial drain cleaners. It's not for really serious problems requiring professional help, but it does work very well. Update: to this recipe I added 1/4 cup liquid laundry detergent and cleaned the carpets for 75% less than using carpet shampoo, and it worked great.

Dry Rub Hot Wings

Dry Rub Hot Wings by Malcom Reed

This is my favorite hot wing recipes. You can use either fresh or frozen wing sections or whole wings. If the wings are frozen, thaw the wings overnight in the fridge. A good tip here is to leave the wings in their original bag but place them in a large bowl because they will leak.

Texas Chuck Wagon Chili (with Venison or Beef)

Texas Chuck Wagon Chili (with Venison or Beef) by Amos Miller

I originally made this with chuck roasts that I would trim out and dice into 1/4 inch cubes. Yes, you will form a blister or two - but it is well worth it. In 1987, this chili, I'm pleased to say, was judged best by members of the Chicago Fire Department in a Chicago Chili Cookoff. This is truly a Texas Chuck Wagon Chili: no…

Mediterranean food lovers always go for these mini meatballs. Make an extra batch, as they freeze well, and can be thawed for future use.

Pork w/ Apple, Onion & Hard Cider Sauce

Pork w/ Apple, Onion & Hard Cider Sauce by Amos Miller

Leaves turning, cooler breezes blowing - time for a comforting pork roast with onions, apples and hard cider. This is a deceptively simple dish that Claire Robinson turned me on to, and is loaded with country flavors. The hard cider reduces down to a savory sauce after Granny Smith apples and sliced onions are caramelized. A very…

Land O' Lakes Butter Pie Crust

Land O' Lakes Butter Pie Crust by myra byanka

Excellent recipe for a double crust 9" pie. The secret to flaky pie crusts is to keep everything cold, as when you combine the ingredients and roll them out, the cold butter creates pockets within the dough, that make the crust flaky when baked.
