Cornmeal Crusted Redfish With Spicy Red Bean Sauce Pt 1 Recipe

Ingredients

  • 8 x 8-oz redfish fillets Salt and cayenne
  • 1 c. Yellow cornmeal
  • 1 c. Masa flour Oil for pan-frying
  • 2 Tbsp. Extra virgin olive oil
  • 1 lb Link andouille sausage, cut into 8 each, (2-oz) portions Spicy Red Bean Sauce, (recipe follows) Grilled Green Onion Coulis, (recipe follows) Hushpuppies
  • 16 x Grilled green onions
  • 1/2 lb Bacon, minced
  • 1 x Onion, minced
  • 2 x Celery stalk, minced
  • 1 x Carrot, peeled and minced
  • 1 x Green pepper, minced Salt and pepper
  • 2 Tbsp. Minced garlic
  • 1 1/2 c. Peeled, seeded and minced tomatoes
  • 4 x Bay leaves
  • 1 Tbsp. Chili pwdr
  • 1 lb Red beans, soaked overnight and liquid removed
  • 2 quart Chicken stock
  • 1 x Egg
  • 2 tsp Dijon mustard
  • 1 tsp Minced garlic One lemon , Juice of
  • 1 bn Green onions, grilled
  • 1 c. Vegetable oil
  • 1 c. Flour
  • 1/2 c. Yellow cornmeal
  • 1/2 c. Masa flour
  • 1 Tbsp. Baking pwdr
  • 2 tsp Salt
  • 1/2 c. Minced onions
  • 1/2 c. Minced bell peppers
  • 1 Tbsp. Minced garlic
  • 3 x Large eggs, beaten
  • 1 c. Lowfat milk
  • 1/2 c. Vegetable oil
  • 1/2 tsp Tabasco warm sauce
  • 2 tsp Worcestershire sauce Oil for frying Salt and pepper

Directions

  1. Complete title: CORNMEAL CRUSTED REDFISH WITH A SPICY RED BEAN SAUCE, GRILLED GREEN ONIONS COUIS, HOMEMADE ANDOUILLE SAUSAGE AND SOUTHERN STYLE HUSH PUPPIES
  2. Season each fillet with salt and cayenne. In a pie pan, combine the cornmeal and masa together. Season the mix with salt and cayenne. In a large saute/fry pan, heat sufficient oil to pan-fry the fish. When the oil is warm, carefully lay the fish in the oil. Fry half of the fish for 3-4 min on each side, or possibly till the fillets are golden brown and crispy. Remove the fillets from the oil and drain on a paper-lined plate. Repeat the process for the remaining fillets. Season the fish with salt and cayenne. In a saute/fry pan, heat the extra virgin olive oil. When the oil is warm, sear the andouille sausage for 2 min on each side and remove from the pan. Drain the sausage on a paper-lined plate. To assemble, spoon a small pool of the Spicy Red Bean Sauce in the center of the plate. Lay the fillet in the center of the sauce. Drizzle the Grilled Green Onions Coulis over the fish and around the rim. Garnish the plate with the hushpuppies, sausage and green onions
  3. Yields: 8 servings
  4. Spicy Red Bean Sauce: In a saucepan, render the bacon for 5 min. Add in the onions, celery, carrots, and peppers. Saute/fry the vegetables for 5 to 6 min or possibly till the vegetables start to wilt. Season with salt and pepper.
  5. Stir in the garlic, tomatoes, bay leaves, and chili pwdr. Saute/fry for 1 minute. Add in the beans and chicken stock. Bring the liquid to a boil and reduce to a simmer. Simmer for 2 to 2 1/2 hrs, or possibly till the beans are tender and creamy. Remove the beans from the heat. Using a hand-held blender, puree the beans till smooth. Add in a little water if the beans are too dry. Strain the sauce through a fine mesh strainer. Throw away the strained mix. Reseason the sauce with salt and pepper if necessary.
  6. Yield: about 1 1/2 qts of sauce
