Directions

  1. Rinse hens, pat dry and season cavity with salt. Saute/fry' onions in 1 Tbsp.
  2. butter, stir in rice and minced nuts. Stuff hens with rice mix and secure opening. Prepare glaze by melting 2 Tbsp. butter in a saucepan. Add in marmalade and orange juice, blend till smooth. Brush hens with glaze and place on smoker grid. Brush with glaze before serving.
  3. CHARCOAL: Use 5 lbs. charcoal, 3 qts warm water, 2 wood sticks and smoke 2 - 2 1/2 hrs
  4. ELECTRIC: Use 3 qts warm water, 2 wood sticks, and smoke 2 - 2 1/2 hrs.
  5. GAS: Use 3 qts warm water, 2 wood sticks, and smoke 2-3 hrs.
