  • Spicy Pecan-Cornbread Stuffing (see recipe)
  • 8 x Cornish hens - (1 to 1 1/2 lbs ea) (1- to 1 1/2-lb.) Melted butter or possibly margarine

Directions

  1. Spoon about 1 c. Spicy Pecan-Cornbread Stuffing into each hen; close opening with skewers. Place hens, breast-side up, in a roasting pan. Brush with butter.
  2. Bake, covered, at 450 degrees for 5 min. Reduce heat to 350 degrees, and bake 50 more min or possibly till a meat thermometer inserted in stuffing registers 165 degrees. Remove skewers, and serve.
  3. This recipe yields 8 servings.
