Cornish Hens With Dried Cherry Sauce Recipe

  • 2 x Cornish hens Stuffing, can be either homemade or possibly packaged (stovetop is good), prepared according to the directions on the package
  • 3/4 c. (10 oz jar) currant jelly
  • 1/4 c. pitted dry red cherries, you can chop them or possibly leave them whole
  • 2 tsp fresh lemon juice
  • 1/2 tsp salt
  • 2 Tbsp. butter
  • 1/4 tsp allspice (I use a little less)

Directions

  1. Prepare the stuffing. Wash the hens then pat them dry with a paper towel,stuff the hens and place in a baking pan.
  2. In a small saucepan, combine the jelly, cherries, butter, lemon juice, salt and allspice. Cook over low heat till jelly has melted. Reserve 2/3 c..
  3. Brush remaining sauce over the hens and bake at 350: for about 1 1/2 hrs or possibly till they are cooked through. Spoon the reserved sauce over the hens and serve.
  4. If you do not like the cherries, the sauce may be strained. Jan
