USING SIFTED COCONUT FLOUR AND YELLOW CORNMEAL. BAKE AT 450 DEGREES FOR 15 TO 20 MINUTES.

Ingredients

  • 4 LARGE EGGS
  • 2 1/2 CUPS ORGANIC MILK
  • 1/4 CUP ORGANIC WARM COCONUT OR OLIVE OIL
  • 1 CUP ORGANIC YELLOW CORN MEAL
  • 1 CUP ORGANIC GLUTEN FREE COCONUT FLOUR, SIFTED
  • 1/4 & 1/8TH CUP ORGANIC STEVIA OR SUGAR
  • 3 TEASPOONS BAKING POWDER
  • 1 TEASPOON ZANTHAN GUM
  • 1/2 TEASPOON IODIZED SEA SALT

Directions

  1. COAT MUFFIN TIN WITH NON-STICK COOKING SPRAY.
  2. BEAT EGGS IN MEDIUM BOWL.
  3. STIR IN MILK, COCONUT OIL, CORN MEAL, SIFTED
  4. COCONUT FLOUR, STEVIA, BAKING POWDER, ZANTHAN GUM AND SALT.
  5. BATTER SHOULD BE CREAMY AND POURABLE, IF TOO THICK, ADD 1 - 2 TABLESPOONS MILK.
  6. PLACE PAN IN OVEN FOR 7 TO 8 MINUTES UNTIL HOT!
  7. FILL CUPS 2/3RD FULL.
  8. BAKE 450 DEGREES FOR 15 TO 20 MINUTES OR UNTIL GOLDEN BROWN.
  9. MAKES 12 MUFFINS.
