Corn Muffins With Green Onions And Sour Cream Recipe

Ingredients

  • 1 c. Unbleached all purpose flour
  • 1 c. Yellow cornmeal
  • 1/4 c. Sugar
  • 2 tsp Baking pwdr
  • 1 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 1/2 tsp Grnd black pepper
  • 1 c. Lowfat sour cream
  • 2 lrg Large eggs
  • 1/4 c. Unsalted butter, melted, cooled (1/2 stick)
  • 1 1/2 c. Frzn corn kernels, thawed, liquid removed
  • 1 c. Minced green onions

Directions

  1. Preheat oven to 425F. Line twelve 1/3-c. muffin c. with paper liners. Combine first 7 ingredients in large bowl. Whisk lowfat sour cream, Large eggs and melted butter in another bowl. Add in lowfat sour cream mix to dry ingedients and stir just till moistened (don't overmix). Mix in corn kernels and green onions.
  2. Divide batter equally among muffin c.. Bake till golden brown and tester inserted into center of muffins comes out clean, about 20 min.
  3. Cold on rack. (Can be prepared 8 hrs ahead. Cover and let stand at room temperature.)
  4. Makes 12 muffins.
