Ingredients

  • 2 x strips bacon, cooked and crumbled, reserve 1 Tbsp. drippings
  • 1/3 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 1 tsp salt
  • 2 tsp baking pwdr
  • 1 x egg
  • 1 1/4 c. lowfat milk
  • 1 Tbsp. reserved bacon drippings In large bowl, mix dry ingredients.

Directions

  1. In separate bowl, mix egg, lowfat milk and bacon drippings. Stir into dry ingredients, mixing well. Batter should be fairly thin; add in lowfat milk if necessary.
  2. Fold in bacon.
  3. Cook pancakes on a greased skillet or possibly on a griddle, and serve with butter and maple syrup.
