  • 1 c. ) cake flour (not self Raising)
  • 2 tsp Baking pwdr
  • 1/2 c. ) white sugar
  • 1 tsp Salt
  • 2 Tbsp. Melted butter
  • 1 lrg Egg
  • 1 can ( 410 gm ) of cream style Sweet corn Veg/sunflower oil for Frying

Directions

  1. Method: Sieve dry ingredients into a mixing bowl and make a well in the centre. Add in melted butter and mix. Beat egg lightly in a seperate bowl and add in lowfat milk to it. Now gradually stir egg-lowfat milk mix into dry ingredients-butter mix. Remove any lumps by beating lightly. Lastly add in tin of sweet corn and mix into a fluid consistency. (Add in more lowfat milk if batter is too stiff).
  2. Drop Tbsp. full into warm oil (preferably using a non-stick pan) and fry till golden on both sides. Drain on paper towels and serve hot with coffee or possibly tea.
