.%20The%20ones%20where%20the%20Yuppies%20(Young%20Urban%20Professionals)%20are%20retiring%20to%20in%20droves.%20They%20appreciate%20good%20International%20flavors%20and%20creativity%20in%20the%20kitchen,%20I%20know%20we%20do.%3C/p%3E%3Cp%3EWhat%20I%20like%20the%20most%20about%20this%20show,%20is%20the%20fact%20that%20the%20chef%20takes%20traditional%20Southern%20foods%20that%20she%20grew%20up%20on%20(like%20a%20tomato%20sandwich),%20twists%20them%20just%20enough%20to%20be%20familiar%20but%20in%20a%20way%20that%20ups%20the%20game%20a%20few%20wonderful%20notches.%3C/p%3E%3Cp%3EThe%20inspiration%20for%20my%20flavor%20combination%20is%20something%20she%20serves%20in%20her%20restaurant.%3C/p%3E%3Cp%3E%22Grits%20really%20are%20a%20blank%20canvas,%20so%20don%E2%80%99t%20shy%20away%20from%20combining%20a%20sweet%20element%20with%20this%20grain.%20One%20of%20our%20most%20popular%20grit%20creations%20at%20the%20restaurant%20is%20a%20Pimped%20Grit%20with%20stewed%20figs,%20caramelized%20onions,%20bacon,%20and%20blue%20cheese.%22%20-%20Vivian%20Howard%20,%20A%20Chef's%20Life%20-%20PBS%3C/p%3E%3Cp%3EHow%20good%20does%20that%20sound.%20I%20love%20grits%20but%20The%20Nudge%20can%20take%20or%20leave%20them.%20I%20thought%20I%20would%20take%20those%20flavors,%20reinvent%20them%20and%20make%20a%20pizza.%20In%20amongst%20the%20gourmet%20cheeses,%20I%20stumbled%20on%20a%20package%20of%20glazed%20&%20roasted%20figs%20imported%20by%20Mt.%20Vikos,%20you%20know,%20the%20authentic%20Greek%20Feta%20people.%20I%20could%20have%20made%20a%20nice%20cheese%20platter%20with%20some%20goat%20cheese,%20nuts%20and%20blue's,%20with%20maybe%20a%20pat%C3%A9%20but%20I%20wanted%20something%20more,%20something%20completely%20different,%20but%20easy.%3C/p%3E%3Cp%3EPre-made%20flat%20breads%20can%20be%20found%20in%20just%20about%20every%20market%20across%20the%20country%20and%20the%20thought%20of%20topping%20them%20with%20corn,%20figs,%20caramelized%20onions,%20bacon,%20blue%20cheese%20and%20braised%20rapini,%20well,%20just%20didn't%20get%20any%20better%20than%20that.%20Let's%20see,%20we%20have%20sweet,%20salty,%20bitter,%20tart,%20crunchy%20and%20creamy.%3C/p%3E%3Cp%3EThis%20is%20what%20I%20did.........%3C/p%3E%3Cp%3EI%20caramelized%20one%20large%20Vidalia%20onion.%20I%20chopped%20some%20pancetta%20into%20lardons,%20added%20blanched%20rapini%20and%20lots%20of%20garlic,%20some%20honey,%20pepper,%20olive%20oil%20and%20beer%20to%20halfway%20up%20the%20food.%20I%20covered,%20lowered%20the%20heat%20and%20braised%20that%20for%2045-50%20minutes,%20until%20the%20pancetta%20was%20melting%20away,%20the%20rapini%20with%20sweet%20and%20softened%20and%20the%20garlic%20was%20roasted%20to%20perfection.%20I%20sauteed%20the%20corn%20with%20a%20balsamic%20glaze,%20broke%20up%20a%20wedge%20of%20Maytag%20blue%20cheese%20and%20added%20that%20to%20a%20grated%20medium%20ball%20of%20fresh%20mozzarella.%20The%20flat%20bread%20will%20be%20painted%20with%20the%20fig%20sauce%20and%20then%20it's%20just%20a%20matter%20of%20layering%20all%20the%20goodies.%3C/p%3E%3Cp%3ETop%20with%20grated%20Romano%20cheese%20and%20bake%20in%20a%20475%C2%B0%20oven%20until%20the%20cheese%20is%20bubbling%20and%20browned.%20Right%20before%20serving,%20drizzle%20each%20with%20very%20good%20olive%20oil.%3C/p%3E%3Cp%3ESo%20tell%20me,%20what%20are%20you%20having%20for%20dinner?%3C/p%3E%3Cp%3EPimped%20Up%20Flat%20Bread%20Pizzas%3C/p%3E%3Cp%3EMakes:%203%20individual%20pizzas%3C/p%3E%3Cp%3E1.%20%20Heat%20a%20heavy%20bottomed%20stock%20pot,%20melt%20the%20butter%20and%20add%20the%20onions.%20Cover%20and%20on%20low%20heat,%20stirring%20every%2020%20minutes,%20cook%20the%20onions%20until%20they%20are%20browned%20and%20sweet,%20about%2045-50%20minutes.%20Makes%20about%201/4%20cup.%3C/p%3E%3Cp%3E2.%20Saute%20the%20pancetta%20in%20a%20small%20saucepan,%20add%20the%20garlic,%20the%20blanched%20broccoli%20rabe,%20some%20honey%20and%20about%201/2%20cup%20beer%20or%20wine;%20bring%20to%20a%20boil.%20Lower%20to%20a%20simmer,%20cover%20and%20braise%20on%20low%20for%2025%20minutes.%3C/p%3E%3Cp%3E3.%20Spread%20each%20flat%20bread%20with%20an%20equal%20amount%20of%20figs%20for%20fig%20jam.%3C/p%3E%3Cp%3E4.%20Top%20the%20figs%20with%20the%20braised%20rapini,%20then%20the%20corn,%20the%20caramelized%20onions%20and%20blue%20cheese%20crumbles.%3C/p%3E%3Cp%3E5.%20Heat%20the%20oven%20to%20475%C2%B0F.%20Sprinkle%20the%20mozzarella%20on%20the%20breads%20and%20top%20with%20the%20grated%20Romano.%3C/p%3E%3Cp%3E6.%20Drizzle%20olive%20oil%20right%20before%20placing%20in%20the%20oven.%3C/p%3E%3Cp%3E7.%20Bake%20for%2015%20minutes,%20then%20broil%20until%20the%20cheeses%20brown.%3C/p%3E%3Cp%3EOne%20flat%20bread%20per%20person.%20Top%20with%20extra%20grated%20Romano%20cheese%20before%20serving%20and%20an%20optional%20drizzle%20of%20good%20quality%20extra-virgin%20olive%20oil.%3C/p%3E){kind=link}
