Coriander Tomato and Potato Soup

Ingredients

  • 2-3 medium size tomatoes - chopped
  • 2 tomatoes - cubed
  • 5 shallots - chopped
  • 3/4 liter vegetable stock
  • 1-2 sticks cinnamon
  • 3-4 cloves
  • 1 tsp cumin powder
  • 1 ts; fennel powder
  • 1 1/2 tsp coriander powder
  • 2-3 sprigs spring onions - sliced
  • 2-3 sprigs coriander leaves - sliced
  • 1 1/2 tbsp butter
  • Pepper and salt for taste

Coriander Tomato and Potato Soup

Time: 25 minutes prep, 30 minutes cook
Servings: 4 person
 

Directions

  1. Heat butter and sauté shallots, cinnamon and cloves.
  2. Add cumin, fennel and coriander powder.
  3. Stir, add tomatoes, potatoes and pour in vegetable stock.
  4. Let the soup simmer till potatoes are cooked.
  5. Season with salt and pepper.
  6. Another stir and off the heat.
  7. Garnish with spring onions and coriander leaves before serving.
