%20%20And,%20whilst%20salad%20is%20still%20not%20his%20favourite%20thing%20to%20eat,%20he%20quite%20enjoys%20them%20once%20he%20digs%20in.%3C/p%3E%3Cp%3EWhen%20my%20family%20was%20growing%20up%20I%20used%20to%20make%20a%20variety%20of%20layered%20salads%20for%20them,%20and%20it%20is%20often%20a%20delicious%20dish%20to%20take%20to%20a%20pot%20luck%20supper.%20%20Everyone%20usually%20loves%20them.%3C/p%3E%3Cp%3EThey%20involve%20layering%20traditional,%20or%20even%20the%20not%20traditional,%20salad%20ingredients%20in%20a%20pretty%20glass%20bowl%20(so%20that%20you%20can%20see%20the%20layers)%20and%20then%20covering%20the%20top%20with%20a%20type%20of%20mayonnaise%20frosting%20to%20seal%20in%20all%20the%20flavours.%20%20It%20also%20helps%20to%20keep%20them%20crisp%20and%20fresh,%20which%20makes%20them%20the%20perfect%20make%20ahead%20salad.%3C/p%3E%3Cp%3EI've%20seen%20them%20topped%20with%20all%20sorts%20of%20cheeses,%20and%20crisp%20bacon%20bits%20.%20.%20.%20and%20even%20crumbled%20tortilla%20chips,%20especially%20in%20the%20case%20of%20a%20mexican%20styled%20one.%20%20(In%20that%20case%20I%20would%20layer%20drained%20mexi-corn,%20chopped%20avocado,%20spring%20onions,%20chopped%20tomatoes,%20chopped%20%20ripe%20olives,%20chopped%20chicken%20etc.%20and%20top%20with%20some%20mayo%20spiked%20with%20salsa%20and%20chilies%20and%20then%20top%20with%20some%20pepper%20jack%20and%20the%20tortilla%20chips.%20%20Nummy%20yummy!)%3C/p%3E%3Cp%3EIt's%20not%20really%20practical%20for%20me%20to%20make%20them%20for%20just%20Todd%20and%20myself%20though%20.%20.%20.%20not%20with%20only%20the%20two%20of%20us%20in%20the%20house%20.%20.%20.%20and%20not%20unless%20I%20am%20making%20one%20up%20for%20a%20church%20supper%20or%20some%20such.%3C/p%3E%3Cp%3EThat%20is%20until%20today%20.%20.%20.%20when%20I%20got%20the%20idea%20to%20tailor%20them%20down%20to%20our%20specific%20needs.%20%20I%20have%20given%20amounts%20for%20one%20serving,%20but%20as%20you%20can%20see%20it%20is%20very%20easily%20adapted%20up!%3C/p%3E%3Cp%3EI%20used%20my%20favourite%20creamy%20Italian%20Dressing%20that%20I%20make,%20also%20cut%20down%20in%20amounts.%3C/p%3E%3Cp%3EIt%20was%20delicious,%20delicious,%20delicious.%20%20Even%20Todd%20was%20a%20happy%20camper.%20%20I%20served%20them%20with%20grilled%20fish%20and%20potatoes.%20%20Yummo!%3C/p%3E%3Cp%3E*Layered%20Chopped%20Salad%20for%20One*%3C/p%3E%3Cp%3EServes%20one%20(is%20easily%20multiplied%20up)%3C/p%3E%3Cp%3EI%3C/p%3E%3Cp%3Elove%20layered%20salads,%20but%20with%20only%20two%20of%20us%20in%20the%20house,%20making%20a%3C/p%3E%3Cp%3Elarge%20one%20is%20highly%20impractible.%20%20So%20I%20adapted%20a%20few%20of%20my%20favourite%3C/p%3E%3Cp%3Erecipes%20and%20scaled%20them%20down%20to%20one.%3C/p%3E%3Cp%3EFor%20the%20salad%20layers:%3C/p%3E%3Cp%3Eprior%20to%20serving.%20%20Delicious!%3C/p%3E){kind=link}
