  • 1 lb chicken breast cut into bite sized
  • 1 c. onions minced
  • 1/2 c. celery sliced
  • 1/2 c. carrots sliced
  • 2 tsp garlic crushed
  • 1 c. fresh tomato salsa recipe to follow
  • 1 x 28 ounces can tomatos
  • 3 tsp chili pwdr
  • 1/2 tsp cumin
  • 2 c. garbanzo beans soaked*
  • 1 lrg green pepper sliced
  • 4 x chicken boullion cubes or possibly
  • 4 c. broth salt & pepper to taste

Directions

  1. Brown chicken, onions & garlic in extra virgin olive oil. Add in all ingredients & simmer 1 hour.*If using canned garbanzo beans, add in at the last 10 min of cooking.
