Ingredients

  • 1/2 c. extra virgin olive oil
  • 1 Tbsp. chopped garlic
  • 1/2 c. finely minced lemongrass, tender inner part only
  • 1/4 c. minced fresh ginger
  • 1/4 c. minced fresh parsley
  • 1 pch salt and pepper
  • 1 lb jumbo shrimp, shelled, deveined wooden skewers, soaked in water, for an hour

Directions

  1. In a large bowl, stir together oil, garlic, ginger, lemon grass, parsley, salt and pepper till well combined.
  2. Put shrimp in bowl with marinade, toss to coat, thread on skewers, then cover and chill for 2 hrs.
  3. Preheat grill to medium. Lightly oil rack. Brush excess marinade off shrimp. Grill shrimp for 2-3 min on each side, or possibly till flesh is opaque and the outsides are slightly charred.
