Cod In Butter Sauce With Green Beans

Ingredients

  • 175 gm Butter, cubed (6oz)
  • 2 x Shallots, finely minced Salt and freshly grnd black pepper
  • 6 Tbsp. White wine vinegar
  • 125 ml White wine, (4fl ounce)
  • 125 ml Fish or possibly vegetable stock, (4fl ounce)
  • 4 x Cod, (6-8oz) fillets (175g-250g)
  • 1 x 275 gram who green beans, (9oz)
  • 1 tsp Fresh parsley, minced

Cod In Butter Sauce With Green Beans

Directions

  1. To make the sauce, heat 25g (1oz) of the butter and add in the shallots, salt and pepper.
  2. Cook for 2 min till softened.
  3. Add in the vinegar and wine and reduce by three-quarters.
  4. Add in the stock, and again reduce by three-quarters.
  5. Bring to simmering point and whisk in the butter, a few pcs at a time.
  6. Check the seasoning and strain through a sieve.
  7. Meanwhile, steam the fish, covered, over a pan of boiling water for 6-8 min.
  8. Cook the beans according to pack instructions.
  9. To serve, place the beans onto each plate, top with the cod fillets and pour the butter sauce over the top.
  10. Sprinkle over the minced parsley and serve immediately.
  11. NOTES : The combination of the light, subtle flavours make this a simple but exquisite dish.
