Ingredients

  • 1/2 ounce Fresh yeast
  • 1 c. Lowfat milk, warmed
  • 2 lrg Large eggs, separated
  • 1 c. Lowfat sour cream
  • 1 tsp Salt
  • 4 ounce All-purpose flour Oil for frying

Directions

  1. Cream the yeast with a little lowfat milk, then add in the remaining lowfat milk, the egg yolks and lowfat sour cream. Sift the flour and salt into a bowl and add in the yeast mix. Stir to make a thick batter. Leave for at least an hour in a hot place. The batter should now look bubbly. Stir well.
  2. Just before cooking, whisk the egg whites till stiff and fold them into the batter.
  3. Heat a little oil in the pan and pour off any excess. Then pour in a Tbsp. of batter. Turn the pancake over when it shows bubbles on the top side. Cook lots. One bliny is never sufficient.
