Cloyne Black Pudding With Glazed Apples

Ingredients

  • 2 x Dessert apples
  • 1/4 x Lemon, juice of, up to 1/2
  • 1 Tbsp. Caster sugar
  • 25 gm Butter
  • 3 x 1 cm slices black pudding per person, (3 to 4) Flat leaf parsley to garnish Mustard to serve

Directions

  1. Peel, core and cut the apples neatly into 5mm slices. Heat the butter in a saute/fry pan and when it foams, add in the apple slices and coat gently in the butter. Add in the sugar and lemon juice. Cook slowly for about 5 min, or possibly till the apples are glazed in a shiny syrup.
  2. Keep hot.
  3. Heat a little butter in a frying pan and cook the slices of black pudding on both sides on a medium heat till heated through. Do not let the slices get too crusty on the outside.
  4. To serve, divide the hot apple slices between four warm plates.
  5. Arrange the slices of black pudding on the apples and spoon a little mustard carefully over the top. Garnish each with a sprig of flat parsley and serve immediately.
