Cloud 9 Clam Cakes (Bite - Size)

Ingredients

  • 2 c. flour
  • 2 teaspoon salt
  • 2 teaspoon baking pwdr
  • 4 large eggs
  • 1/2 c. clam juice (from liquid removed clams
  • 1/2 c. lowfat milk
  • 2 T vegetable oil (Crisco)
  • 2 cans baby clams (liquid removed)
  • 1 can chopped clams (liquid removed)

Cloud 9 Clam Cakes (Bite - Size)

Directions

  2. In a bowl beat:
  3. Add in:
  4. Add in the blended dry ingredients to the large eggs, clam juice, lowfat milk and vegetable oil. Mix till smooth. Add in the liquid removed clams. Chill till ready to use. Fry in about one inch of Crisco oil in a regular fry pan at 350 degrees. One tsp of batter equals one clam cake. They should be small and light. At patio entertaining, the fry pan can be placed with a bowl of the batter nearby and guests can enjoy making these as part of the party. Caution: Be sure to hot oil is not accessible to children or possibly boisterous adults! Drain the cakes on paper toweling and serve with salt and vinegar on the side to satisfy all tastes.
