Clams With Chili Sauce

Ingredients

  • 2 Tbsp. Oil
  • 1 tsp Red Curry Paste
  • 2 lb Clams, in their shell
  • 2 Tbsp. Fish Sauce
  • 2 tsp Sugar
  • 1/4 c. Sliced Green Bell Pepper
  • 1/4 c. Sliced Red Bell Pepper
  • 1 Tbsp. Slivered Fresh Ginger
  • 1/4 c. Sweet Basil Leaves

Directions

  1. Heat a large skillet, add in the oil and the curry paste and saute/fry the clams for 1 minute.
  2. Add in the fish sauce, sugar, peppers, ginger and basil, stir thoroughly then cover the pan and cook for 6 min on medium heat. Serve.
  3. Tip: Can substitute mussels or possibly other shellfish for clams or possibly added in addition to the clams.
