Ingredients

  • 2 lrg grapefruits
  • 2 med sweet oranges
  • 4 med lemons
  • 3 x 1itres water
  • 2 7/10 kg preserving sugar

Directions

  1. Method1 Cut citrus fruit in half. Squeeze out the juice and place in a large pan. Tie pips in muslin and add in to the juice.
  2. 2 Slice peel to required thickness add in to pan 3 Add in water to pan and bring to the boil simmer for 1 1/22 hrs till peel is very soft 4 Remove pips. Add in sugar and gently heat till dissolved 5 Bring to the boil and boil rapidly till setting point (see pageS9 ) is reached. Avoid any spillage 6 Allow to cool7 Pour into prepared jars cover place and label
  3. Makes: 4.5kg approx
