Cinnamon, chocolate and mocha pie

Ingredients

  • 100 g butter
  • 1 tbs instant coffee
  • 100 g dark chocolate, coarsely chopped
  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup flour
  • 1 tbs ground cinnamon
  • 1 pie pastry for the 23 cm pie pan
  • Pastry:
  • 2 cups all-purpose flour
  • A pinch of salt
  • 1/2 cup vegetable shortening
  • 1/2 cup cold butter
  • 1 large egg
  • 2 tsp white vinegar
  • 2 tbs ice-cold water

Cinnamon, chocolate and mocha pie

Time: 15 minutes prep, 25 minutes cook
Servings: 8
 

Directions

  1. In a small saucepan over medium-low heat, melt butter and add instant coffee.
  2. Stir in the chopped chocolate and continue to stir until chocolate is melted and the mixture is smooth. Remove from heat, set aside, and allow to cool.
  3. In another bowl, beat eggs and sugars until slightly frothy. Add cooled chocolate and vanilla extract.
  4. Stir in flour and cinnamon.
  5. Pour mixture into prepared pie shell and bake at 180°C for 25 minutes or until the filling sets.
  6. Allow pie to cool to room temperature before serving (the pie will cut better).
