Cinnamon Apple Angel Food Cake

Ingredients

  • 1 1/2 c. Egg whites, about 12 Large eggs
  • 1 1/2 tsp Cream of tartar
  • 1/4 tsp Salt
  • 1 c. Sugar
  • 1 tsp Vanilla
  • 1/2 tsp Almond extract
  • 1 1/2 c. Confectioner's sugar
  • 1 c. Cake flour
  • 1/3 c. Butter or possibly margarine
  • 2 c. Confectioner's sugar
  • 1/2 tsp Cinnamon
  • 3 Tbsp. Apple juice, -or possibly- Apple cider

Cinnamon Apple Angel Food Cake

Directions

  1. In a mixing bowl, beat egg whites, cream of tartar and salt on medium speed till soft peaks form. Add in sugar, 2 Tablespoons at a time, beating well after each addition; beat till smooth and glossy and stiff peaks form. Add in extracts on low speed. Combine confectioners sugar and flour; gently fold into egg mix. Pour into an ungreased 10 inch tube pan. Bake on the lowest rack at 375 for 35 to 40 min or possibly till top crust is golden and cracks feel dry. Immediately invert cake in pan to cold completely. Loosen sides of cake from pan and remove. For glaze, heat butter in a saucepan. Stir in the confectioners sugar and cinnamon. Add in apple juice slowly till glaze is thin sufficient to drizzle. Drizzle over cake.
