  1. boil, bake or fry breasts and cut into 1/2 inch cubes, place in large bowl. Use the green of the onion,chopping into about 1/4 inch pieces. Chop the celery stalk into small pieces,place onion and celery into same bowl as chicken. Spoon mayonaise by tablespoon, mixing into bowl until desired thickness, salt and pepper to taste, Refrigerate until chilled, serve on bread as sandwich, or use as a dip with crackers.
