Chorizo Sausage and Beans

Nothing says “cold weather classic” to me like one of my childhood favorites, beanies and weenies. At my house that is what we called pork and beans with hot dogs cut up and mixed together and baked in the oven. I loved it! My mother always made a pan of corn bread to go with it and I remember eating it when the weather was cold and miserable outside. I decided to make an updated grownup version of my childhood favorite. It was a hit!

Ingredients

  • 1 pound Chorizo sausage
  • 1/4 cup onion, chopped
  • 1 can (6 ounces) tomato paste
  • 1 can (15.5 ounces) Great Northern beans, drained
  • 1 can (15.5 ounces) pinto beans, drained
  • 1 can (14.5 ounces diced tomatoes
  • 1 teaspoon brown sugar
  • 1 teaspoon ground mustard

Directions

  1. Combine the sausage and onions in a Dutch oven and brown over medium heat until the sausage is cooked and the onions are translucent. Mix the beans, tomato paste, diced tomatoes, brown sugar and ground mustard with the sausage/onion mixture in the Dutch oven. Stir well to combine the ingredients. Place lid on Dutch oven and bake in 350 degree oven for 25 minutes. Makes 6 servings.
