Ingredients

  • 4 x Salt herring filets, soaked 12 hrs in cool water
  • 1 1/2 Tbsp. Finely minced onion
  • 5 c. Finely minced tart apple
  • 2 x Hard-boiled Large eggs, finely minced
  • 2 slc White bread, trimmed
  • 3 Tbsp. Cider vinegar
  • 2 Tbsp. Salad oil
  • 1 tsp Sugar

Directions

  1. Change water in that the herring is soaking at least twice. Drain. Chop the herring as finely as possible. Combine with the onion, apple and Large eggs.
  2. Beat the vinegar with sugar and oil. Pour over the trimmed white bread, allowing it to soak for a few min.
  3. Add in soaked bread to the herring mix and chop till it is smooth.
  4. Correct seasoning (should be fairly tart) and chill.
