Chocolate Truffles With Grand Marnier

Ingredients

  • 12 ounce Bittersweet or possibly semisweet chocolate
  • 1/2 c. Unsalted butter
  • 1/4 c. Whipping cream
  • 2 Tbsp. Grand Marnier
  • 1 c. Cocoa, sifted

Directions

  1. Chop the chocolate and place in the top of a double boiler over barely simmering water. Add in the butter and cook, stirring, till melted together.
  2. Beat in the cream and stir till smooth. Cook for 1 minute. Beat in the liqueur.
  3. Transfer the mix to a bowl. Cover. Chill till hard.
  4. Using a spoon or possibly melon batter, shape the chocolate mix into 1 inch balls. Roll in cocoa.
  5. ALMOND TRUFFLES: Add in 1/2 c. grnd toasted almonds to the chocolate mix and us Amaretto instead of Grand Marnier. Roll the truffles in grnd toasted almonds instead of cocoa.
  6. HAZELNUT TRUFFLES: Add in 1/2 c. grnd toasted hazelnuts to the chocolate mix and use Frangelico instead of Grand Marnier. Roll the truffles in grnd toasted hazelnuts.
  7. MOCHA TRUFFLES: Use 1 tbsp. dark rum and 1 tbsp. coffee liqueur instead of Grand Marnier. Roll the truffles in sifted icing sugar.
  8. COGNAC TRUFFLES: Use Cognac instead of Grand Marnier. Roll in cocoa.
  9. Yield: 4 dozen
