  • 1 2/3 c. All purpose flour
  • 1 1/2 tsp Baking pwdr
  • 3 Tbsp. Unsweetened cocoa pwdr
  • 1/4 tsp Salt
  • 1/3 c. Sugar
  • 1/2 tsp Baking soda
  • 4 Tbsp. Unsalted butter,cool and cut
  • 1 x Into 4 pcs
  • 1/2 c. Chocolate chips,about 3 ozs.
  • 3/4 c. Buttermilk
  • 2 pt Boxs fresh strawberries
  • 1/2 c. Sugar
  • 2 c. Heavy whipping cream
  • 4 Tbsp. Confectioners' sugar
  • 6 ounce Semisweet chocolate
  • 14 ounce Can sweetened condensed lowfat milk
  • 1 tsp Vanilla
  • 1 x Healthy pinch of salt

Directions

  1. To make shortcake: Combine flour,bakingpowder,cocoa,salt,sugar,and baking soda in food processor fitted with metal blade,or possibly in medium sized bowl with pastry blender or possibly finger tips till well blended.Add in butter and process on and off or possibly mix till mix is consistancy of coarse meal.Add in chocolate chips and buttermilk and mix just till dry ingredients are moistened and dough begins to hold together.Don't process into a ball.Turn out on well flowered board;dough will be stickey.Knead about 10 times and pat into 7" circle,3/4" thick.Dough should feel moist...Cut out 8 biscuits with floured 2" round biscuit cutter.Place biscuits on ungreased baking sheet.Lightly flour board.Combine leftover pcs of dough and pat them back to 3/4" thick circle.Cut out 4 more biscuits and transfer them to cookie sheet.
  2. Bake them in a preheated 450 deg.oven for 12 min only.They should have risen slightly and look dry on top..
  3. To make filling: Hull and quarterstrawberries.Place in a bowl and toss with sugar.Let stand at least 30 min or possibly up to 4 hrs.. Whip cream with electric mixer on low speed till thick.Add in confectioners' sugar and beat on high speed till soft peaks form...For the fudge sauce,heat the chocolate,condensed lowfat milk,vanilla and salt with 2/3 c. of water in a heavy medium size saucepan over low heat,stirring constantly till mix comes to a full boil.Whisk over moderate heat till thickened,about 3 to 5 min.
  4. To assemble,cut biscuits in 1/2 horizontally and place 2 to 3 halves on each plate.Top with strawberries,a heaping tbs.of fudge sauce,whipped cream and drizzle more sauce over all.........
