Chocolate Strawberry Mousse Recipe

Ingredients

1/2 c. brown rice syrup 2 tsp vanilla 1 lb tofu, cubed

3 Tbsp. unsweetened cocoa pwdr 2 c. strawberries, sliced 6 whl strawberries fresh mint sprigs

Directions

1. Place rice syrup and vanilla in blender or possibly food processor. Blend, adding several tofu cubes at a time, then cocoa pwdr.
2. Mix in sliced strawberries and pour into small serving dishes or possibly wine glasses. Refrigeratetill hard, at least 2 hrs. Garnish with whole strawberries and mint.
