Since posting about our party menu, complete with dessert bites of pumpkin bread, snickerdoodle blondies (recipe here), and peppermint oreo crispy treats, I have had a few requests for that crispy treat recipe. It really is quite a simple one. However, while the first two batches were successful in taste, they were a bit crumbly in my opinion … so I wanted to make sure I was posting a recipe that would work best.
You see, it was my first time experimenting with Marshmallow Fluff (the brand), and boy was it a gooey mess! As a kid I did use mashmallows and even Jet-Puffed Marshamallow Creme, but never remembered it being quite so glue-like.

,%20and%20peppermint%20oreo%20crispy%20treats,%20I%20have%20had%20a%20few%20requests%20for%20that%20crispy%20treat%20recipe.%20It%20really%20is%20quite%20a%20simple%20one.%20However,%20while%20the%20first%20two%20batches%20were%20successful%20in%20taste,%20they%20were%20a%20bit%20crumbly%20in%20my%20opinion%20%E2%80%A6%20so%20I%20wanted%20to%20make%20sure%20I%20was%20posting%20a%20recipe%20that%20would%20work%20best.%3C/p%3E%3Cp%3EYou%20see,%20it%20was%20my%20first%20time%20experimenting%20with%20Marshmallow%20Fluff%20(the%20brand),%20and%20boy%20was%20it%20a%20gooey%20mess!%20As%20a%20kid%20I%20did%20use%20mashmallows%20and%20even%20Jet-Puffed%20Marshamallow%20Creme,%20but%20never%20remembered%20it%20being%20quite%20so%20glue-like.%3C/p%3E%3Cp%3ERegardless,%20this%20recipe%20turns%20out%20delicious,%20and%20the%20crispy%20treats%20are%20even%20better%20after%20a%20day,%20as%20the%20peppermint%20flavor%20infuses%20itself%20throughout%20the%20treats%20upon%20sitting.%20I%20like%20to%20stash%20the%20bars%20in%20the%20freezer,%20where%20they%20stay%20nice,%20cool,%20and%20crispy%20%E2%80%A6%20but%20that%E2%80%99s%20just%20me.%20Also,%20since%20I%20made%20this%20recipe,%20(ahem)%20just%20a%20few%20times,%20I%20did%20some%20experimentation%20and%20even%20made%20a%20vegan%20version%20with%20Susan%E2%80%99s%20Ricemellow%20Creme%20(a%20gift%20from%20Dairy%20Free%20Market!),%20experimented%20with%20coconut%20oil,%20and%20mixed%20up%20the%20chocolate%20for%20dark%20loving%20fans.%3C/p%3E%3Cp%3EThis%20is%20a%20bit%20of%20a%20seasonal%20delight,%20since%20minty%20Oreos%20are%20not%20usually%20sold%20year-round.%20I%20used%20the%20Peppermint%20(Candy%20Cane)%20Joe%20Joe%E2%80%99s%20from%20Trader%20Joes,%20which%20are%20incredible,%20and%20I%20have%20a%20little%20secret.%20Last%20year%20those%20cookies%20went%20on%20clearance%20after%20the%20holiday%20for%20a%20$1%20a%20box,%20so%20I%20kept%20the%20holiday%20love%20going%20for%20months!%20Keep%20an%20eye%20out%20and%20stock%20up%20if%20you%20like%20these%20beauties!%3C/p%3E%3Cp%3ENo%20minty%20sandwich%20cookies?%20You%20can%20stick%20with%20regular%20Oreo-type%20cookies%20too,%20and%20if%20you%20still%20like%20that%20minty%20taste,%20add%20some%20extract!%20I%20haven%E2%80%99t%20trialed%20the%20extract%20as%20of%20yet,%20but%20have%20included%20a%20general%20amount%20as%20a%20suggestion%20in%20the%20recipe.%3C/p%3E%3Cp%3EChocolate%20Peppermint%20%E2%80%9COreo%E2%80%9D%20Crispy%20Treats%3C/p%3E%3Cp%3EThis%20recipe%20is%20Dairy-Free,%20Nut-Free,%20Soy-Free,%20and%20optionally%20Gluten-Free,%20Egg-Free,%20and%20Vegan.%3C/p%3E%3Cp%3EGently%20crush%20the%20cookies.%20I%20placed%20them%20in%20a%20baggie,%20and%20firmly%20pressed%20down%20on%20each%20cookie%20to%20break%20them%20into%20chunks%20sized%20to%20my%20liking,%20without%20making%20a%20mess!%20Set%20aside.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20%E2%80%93%20I%20do%20this%20in%20a%20bowl%20in%20the%20microwave%20in%20about%20two%2030%20second%20intervals,%20stirring%20vigorously%20after%20each%20heating%20to%20get%20those%20last%20chips%20melted.%20Do%20not%20overcook%20your%20chocolate!%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20your%20margarine%20or%20coconut%20oil%20in%20a%20medium%20to%20large%20saucepan,%20and%20melt%20over%20low%20to%20medium-low%20heat%20(my%20stove%20doesn%E2%80%99t%20even%20function%20at%20low%20heat).%20%20Add%20the%20marshmallows%20or%20creme%20and%20continue%20to%20stir%20as%20they%20melt%20in.%20This%20will%20take%20about%205%20minutes%20to%20get%20a%20nice%20smooth%20mixture.%20Stir%20in%20the%20chocolate%20until%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20crispy%20rice%20creal%20and%20sandwich%20cookies,%20stirring%20until%20thoroughly%20combined.%20I%20start%20with%204%20cups,%20but%20ended%20up%20using%20the%20full%205%20cups%20with%20the%20Ricemellow%20Creme%20and%20marshmallows.%3C/p%3E%3Cp%3EPress%20firmly%20into%20a%20greased%20baking%20dish.%20An%208%20x%208%20dish%20will%20make%20taller,%20full-sized%20crispy%20treats,%20while%20a%209%20x%2013%20will%20make%20thinner,%20bite-sized%20crispy%20treats.%20Allow%20to%20cool%20before%20cutting%20into%20squares%20%E2%80%93%20I%20fridge%20(or%20freeze)%20them,%20especially%20when%20using%20the%20coconut%20oil,%20which%20makes%20for%20a%20firmer,%20crunchier,%20crispy%20treat%20and%20helps%20the%20chocolate%20to%20quickly%20set%20up.%3C/p%3E%3Cp%3ENote:%20The%20chocolate%20gives%20these%20a%20different%20texture%20than%20your%20traditional%20rice%20crispy%20treat.%20I%20like%20it%20this%20way,%20but%20if%20you%20want%20that%20gooey%20crispy%20treat%20texture%20with%20a%20chocolatey%20taste,%20skip%20the%20chocolate%20chips,%20but%20add%20in%202%20to%203%20tablespoons%20of%20cocoa%20powder%20(to%20taste)%20and/or%20use%20cocoa%20crispy%20rice%20cereal.%20Adjust%20cereal%20amount%20up%20if%20needed.%3C/p%3E%3Cp%3EGluten-Free:%20Erewhon%20offers%20gluten-free%20crispy%20brown%20rice%20cereal%20(which%20I%20used),%20and%20I%20believe%20there%20are%20some%20o
