  1. Combine sugar, butter and evaporated lowfat milk in a medium saucepan over medium heat.
  2. Bring to a boil; lower heat to a simmer. Add in chocolate and stir constantly till temperature reaches 238 degrees on a candy thermometer.
  3. Stir in vanilla, pecan pcs and pecan halves. Simmer an additional minute and remove from heat. Allow to cold for 5 min, stirring occasionally.
  4. Drop pralines by heaping Tbsp. onto parchment or possibly wax paper and allow to sit at room temperature till pralines are set up. Store in an airtight container.
