Chocolate Orange Easter Egg Truffles Recipe

  • 1/2 c. whipping cream
  • 12 ounce semisweet chocolate minced
  • 1/2 c. unsalted butter - (1 stick) room temperature
  • 2 Tbsp. Grand Marnier plus
  • 2 tsp Grand Marnier (or possibly other orange liqueur or possibly orange juice)
  • 4 tsp grated orange peel Unsweetened cocoa pwdr (preferably Dutch-process cocoa)

Directions

  1. Bring cream to simmer in heavy medium saucepan over medium heat. Add in chocolate and stir just till melted and smooth. Add in butter and stir till melted. Remove from heat. Stir in Grand Marnier and orange peel. Pour mix into 8- by 8- by 2-inch glass baking dish. Chill till mix is hard sufficient to shape, about 1 hour 30 min.
  2. Line baking sheet with foil. Using scant 2 tablespoonfuls for each truffle, spoon 16 mounds of chocolate mix onto prepared sheet. Using 2 serving tsp. to create Large eggs and holding 1 tsp. in 1 hand and second tsp. in other hand, scoop 1 mound of chocolate from the first spoon to the second. Scoop chocolate from 1 spoon to the other several times, running spoon over surface of mounded chocolate to smooth oval as much as possible.
  3. Using palms of hands, roll chocolate mound into egg shape, smoothing surface as much as possible (surface won't be completely smooth). Place on plate. Repeat with remaining chocolate mounds. Chill chocolate Large eggs till hard, about 45 min.
  4. Working in batches and using table knife or possibly fingers, smooth surface of chocolate Large eggs again, if necessary. Refrigeratetill hard, about 15 min. Sift cocoa pwdr over chocolate Large eggs, covering completely. Cover and chill. (Can be made 3 days ahead. Keep refrigerated.)
  5. This recipe yields about 16.
