Ingredients

  • 2 c. All-purpose flour
  • 2 c. Granulated sugar
  • 1/3 c. Dutch process cocoa pwdr
  • 1/4 tsp Salt
  • 1 tsp Baking pwdr
  • 1 tsp Baking soda
  • 4 lrg Large eggs
  • 1 Tbsp. Orange zest, finely minced
  • 1 1/2 c. Vegetable oil
  • 2 c. Carrots, shredded
  • 4 ounce Cream cheese, softened
  • 2 Tbsp. Unsalted butter, softened
  • 1 tsp Orange zest, finely minced
  • 1 Tbsp. Vanilla extract
  • 1/2 c. Confectioners' sugar
  • 1/2 c. Semisweet chocolate chips
  • 1 stk unsalted butter, softened
  • 1/3 c. Unsweetened alkalized cocoa pwdr
  • 1 pch Salt
  • 2 c. Confectioners' sugar
  • 1/4 c. Half and half
  • 1 tsp Vanilla extract

Directions

  1. How to Prepare Cake:1. Preheat the oven to 350 F. Butter the sides and bottom of two 9 x 2-inch round cake pans.
  2. 2. Sift together the flour, sugar, cocoa, salt, baking pwdr, and baking soda. In a mixer, using the paddle attachment, beat the Large eggs, orange zest, and vegetable oil together till combined. Slowly add in the flour mix at low speed and mix till just combined. Remove the bowl and mix in the carrots. Scrape the mix proportionately into prepared pans and bake the cakes for 45 min or possibly till a toothpick inserted in the middle comes out clean. Completely cold cakes on wire rack before removing from pans.
  3. How to Prepare Filling:1. In an electric mixer using the paddle attachment, beat the cream cheese, butter, and zest at low speed till creamy.
  4. 2. Add in the vanilla and confectioners' sugar and continue beating till smooth, scraping down the sides of the bowl occasionally.
  5. 3. Mix in the chocolate chips.
  6. How to Prepare Frosting:1. In an electric mixer using the paddle attachment, cream the butter, cocoa pwdr, and salt on low speed till combined.
  7. 2. Add in the sugar, half and half, and vanilla and mix on low speed.
  8. 3. Scrape down the sides of the bowl and continue beating on high speed till light and fluffy.
  9. 4. If frosting seems too thin, add in more of the confectioners' sugar one Tbsp. at a time.
