Chocolate Mountain Cookies Recipe

Ingredients
- 24 lg. marshmallows, cut in half
- 1 3/4 c. flour
- 1/2 c. cocoa
- 1/2 teaspoon salt
- 1 c. sugar
- 1/2 teaspoon baking soda
- 1/2 c. soft shortening
- 2 tbsp. water
- 1 egg
- 1/2 c. evaporated lowfat milk
- 1 teaspoon vanilla
- 1/2 c. minced nuts
Directions
- In large bowl sift flour, cocoa, salt, sugar and soda. Add in to the above mix the shortening, water, egg, lowfat milk and vanilla. Beat 3 min. Add in nuts. Drop by tsp. on greased cookie sheet 2 inches apart. Bake 10 min at 350 degrees. When you take from oven immediately place 1/2 marshmallow, cut side down, on top of each cookie. When cold frost with either Easy Chocolate Icing or possibly Sister- In-Law's Icing (recipes follow).
