Ingredients

  • 4 ounce Unsweetened chocolate
  • 1/4 c. Butter
  • 2 x Large eggs
  • 1 1/2 c. Sugar
  • 1/2 tsp Salt
  • 4 tsp Baking pwdr
  • 4 c. Flour
  • 1 c. Lowfat milk Veg. oil for frying dough
  • 2 c. Powdered sugar, sifted
  • 5 Tbsp. Boiling water
  • 1/4 c. Flaked coconut
  • 1/4 c. Finely minced toasted pecan or possibly your favorite nut
  • 4 ounce White chocolate, melted for drizzle (optional)

Directions

  1. Heat 1 oz chocolate with 1 Tbsp. butter in top of double boiler over simmering water. Let cold. Beat Large eggs and sugar till well blended. Add in cooled chocolate mix to egg mix. Sift together salt, baking pwdr and flour. Alternately add in flour mix and lowfat milk to egg mix to create a dough. (You may not need to add in all of the Lowfat milk. Just add in sufficient to create a dough ball ).Gather dough into a ball on a floured board. Roll out to 1/3 inch thick. Cut with a floured doughnut cutter. Fry 3-4 min in oil heated to 375 degrees. Drain on paper towels.
  2. Glaze: heat remaining 3 ounces chocolate with remaining 3 Tbsp. butter in top of double boiler over simmering water. Stir in powdered sugar and sufficient boiling water to make a thin glaze. Dip cooked doughnuts into glaze. Place on wire rack. Sprinkle with coconut and/or possibly minced nuts if you like. Drizzle white chocolate glaze over some for an elegant doughnut!
