.%20%20In%20addition,%20oats%20are%20known%20to%20enhance%20immune%20responses%20to%20infection,%20stabilize%20blood%20sugar%20and%20lower%20Type%202%20Diabetes%20risks.%20%20With%20all%20that%20%22good%20stuff%22%20rolled%20up%20in%20one%20package,%20oatmeal%20cookies%20were%20just%20the%20treat%20to%20send%20to%20our%20heart%20surgery%20recovering%20friend.%3C/p%3E%3Cp%3EFlavored%20with%20cocoa%20powder%20for%20a%20rich%20color%20and%20taste,%20and%20a%20shot%20of%20espresso%20(we%20used%20decaf),%20these%20cookies%20were%20just%20what%20the%20doctor%20ordered%20for%20those%20afternoon%20sweet%20cravings.%20%20Forming%20the%20cookies%20fairly%20small,%20grabbing%20two%20didn't%20make%20me%20feel%20at%20all%20guilty%20and%20somehow%20I%20convinced%20myself%20that%20with%20the%20addition%20of%20a%20couple%20of%20chocolate%20chips%20some%20extra%20antioxidant%20benefits%20were%20thrown%20in%20for%20good%20measure.%3C/p%3E%3Cp%3EDave%20reported%20back%20that%20he%20enjoyed%20the%20cookies%20and%20is%20well%20on%20the%20road%20to%20recovery.%3C/p%3E%3Cp%3EChocolate%20Espresso%20Oatmeal%20Cookies%3C/p%3E%3Cp%3Eadapted%20from%20Vegetarian%20Times,%20December%202011,%20page%2075%3C/p%3E%3Cp%3EFlavorful%20and%20with%20a%20nice%20bite,%20these%20cookies%20may%20not%20actually%20be%20%22health%20food%22,%20but%20in%20moderation%20they%20make%20a%20darn%20nice%20and%20not%20so%20bad%20for%20you%20treat.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20the%20flours,%20cocoa%20powder,%20salt%20and%20baking%20soda.%3C/p%3E%3Cp%3EPlace%20the%20butter%20and%20sugar%20together%20in%20a%20large%20bowl%20and%20mix%20with%20a%20mixer%20until%20smooth.%20%20Beat%20in%20the%20espresso%20and%20vanilla%20and%20mix%20until%20combined.%3C/p%3E%3Cp%3EWith%20a%20wooden%20spoon%20add%20the%20flour%20mixture%20to%20the%20creamed%20butter%20mixture.%20%20When%20most%20of%20the%20flour%20is%20incorporated,%20stir%20in%20the%20oats%20and%20chocolate%20chips.%20%20Mix%20just%20until%20incorporated.%3C/p%3E%3Cp%3EDivide%20dough%20in%20half%20and%20transfer%20each%20half%20to%20a%20large%20sheet%20of%20plastic%20wrap%20or%20waxed%20paper.%20%20Use%20the%20wrap%20to%20shape%20the%20dough%20into%20two%202%20inch-diameter%20logs.%20%20Wrap%20tightly%20and%20chill%20for%20at%20least%202%20hours%20or%20overnight.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%BAF.%20%20Remove%20dough%20from%20the%20fridge%20and%20remove%20the%20wrapping.%20%20Slice%20the%20dough%20into%201/2-inch%20thick%20slices.%20%20Transfer%20slices%20to%20a%20greased%20or%20silicone%20mat%20lined%20baking%20sheet.%20%20Bake%20for%208-11%20minutes,%20or%20until%20the%20cookies%20look%20dry%20on%20top.%20%20Cool%20the%20cookies%20for%20three%20minutes%20on%20the%20baking%20sheet%20then%20transfer%20to%20a%20wire%20rack.%3C/p%3E%3Cp%3ELiv%20Life%20Note:%20%20Usually%20I%20like%20cookies%20warm%20from%20the%20oven.%20%20While%20these%20little%20gems%20were%20indeed%20good%20warm,%20I%20liked%20them%20even%20better%20hours%20later!%20%20And%20on%20a%20side%20note...%20darn%20good%20cookie%20dough!%20%20:)%3C/p%3E%3Cp%3EMe%20and%20Dave%20-%20July%202011%3C/p%3E){kind=link}
