Chocolate Chip Zucchini Cake

Don't let the zucchini fool you the is a very decadent cake especially when you the cake is just cooled but the chocolate chips are still very gooey so every fork full of cake is met with a luscious melted chocolate full bite .

Ingredients

  • 1/2 C Butter softened
  • 1 3/4 C Sugar
  • 1/2 C Vegetable oil
  • 2 Eggs
  • 1 tsp Pure vanilla extract
  • 2 1/2 C All purpose flour sifted
  • 2 Tbl Dutch cocoa powder
  • 1 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Ground cinnamon
  • 1 tsp Salt
  • 1/2 C Buttermilk
  • 2 C Peeled shredded zucchini
  • 2 C Semi sweet chocolate chips ( I used Ghiardelli)

Directions

  1. Pre heat oven to 350 degrees
  2. In a large bowl cream together the softened butter and sugar
  3. Beat in the oil, eggs and vanilla
  4. Combine all the dry ingredients In a separate bowl and add to the creamed mixture alternating with the buttermilk
  5. Stir in the shredded zucchini
  6. Pour into a greased 9x13 pan
  7. Sprinkle the top with the chocolate chips
  8. Bake at 350 degrees for 40 - 45 minutes or until a inserted toothpick in the center comes out clean
  9. Cool on a wire cooling rack
