Chocolate Chip Meringue Bars

A different twist on a chocolate chip bar. The egg yolks are used in the dough, and the whites are beaten with brown sugar to make a meringue topping for the bars. Made by his mother, these bars were a childhood favorite of my husband. It was a race to the mailbox when a shoebox full of these bars would be sent to him at college.The airy meringue top, layer of chocolate and cookie base made these bars a favorite childhood treat.

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup shortening
  • 2 eggs, separated
  • 1 tsp vanilla
  • 1 Tbsp cold water
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1 cup brown sugar

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9 x 13 baking pan or line with parchment paper. In a mixer cream together the 1/2 cup granulated sugar, 1/2 cup brown sugar and 1 cup shortening. Add egg yolks, vanilla and water and blend well. Add the flour, baking soda and salt and mix on low speed just until blended.
  3. Turn the dough out into the prepared pan and spread dough evenly over the bottom of the pan. I find that lightly wetting my hands and using them to spread the dough in the pan works best. Sprinkle the chocolate chips evenly over the surface of the dough. In a separate bowl whip the egg whites until foamy. Slowly add the 1 cup brown sugar and beat until stiff but not dry peaks form. Spread the egg white mixture over the chocolate chips. Bake for 25 minutes or until the top is golden brown. Remove from oven and cool thoroughly on a rack. Cut into bars.
