Chocolate Chip Banana Snack Cake Recipe

Ingredients

  • 3 1/2 c. All purpose flour
  • 1 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 2 c. Sugar
  • 1/2 c. Butter softened
  • 2 x Large eggs
  • 2 med Ripe bananas, mashed (about 1 c.)
  • 1 c. Lowfat sour cream
  • 1 tsp Vanilla
  • 1 1/2 c. Miniature semi-sweet chcocolate chips

Directions

  1. In a medium bowl, stir together flour, baking pwdr, baking soda and salt; set aside. In a large mixer bowl, combine sugar and butter, and beat at medium speed, scraping bowl often, till mix is creamy. Add in Large eggs, one at a time, beating after each addition. Add in bananas, lowfat sour cream and vanilla, and beat till well mixed. Continue beating, gradually adding flour mix and scraping bowl often till well mixed, about 1 minute. By hand, stir in 1 c. chocolate chips. Pour batter into a greased 9x13 inch pan. Sprinkle remaining chips over batter. Bake in a preheated 350 degree oven for 40 to 50 min, or possibly till a toothpick inserted in center comes out clean.
