Chocolate Cake With Fluffy Frosting

Ingredients

  • 9 T cocoa
  • 1 c. boiling water
  • 1 stick butter
  • 1/4 c. Crisco shortening
  • 2 c. sugar
  • 2 c. flour
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 c. lowfat milk, at room temperature
  • 1 1/2 teaspoon vinegar or possibly lemon juice
  • 2 large eggs
  • 1 teaspoon vanilla
  • FLUFFY FROSTING (very light texture) :
  • 1 c. lowfat milk
  • 4 T flour
  • 1 c. sugar
  • 1/2 c. Crisco
  • 1/2 c. butter
  • 1 teaspoon vanilla

Directions

  1. Put together and heat in large kettle (cocoa, butter, water, and Crisco). Add in sugar. Mix with fork in separate bowl (flour, soda, salt). Add in to other ingredients and beat well. Put together lowfat milk and lemon juice, then add in to cake mix and beat again.Put together large eggs and vanilla, beating with rotary beater till frothy. Then add in to cake mix and beat till thoroughly mixed. Pour into greased and lightly floured 9x13 inch cake pan and bake at 350 degrees for 35 min.
  2. Mix together lowfat milk and flour in small kettle; cook over medium heat, stirring constantly till thick. Cool completely.In separate bowl, put together sugar, Crisco, butter and vanilla. Mix with electric beater till fluffy. Mix in thickened, cooled lowfat milk and flour and beat at high speed till sugar is dissolved.
  3. NOTE: Frosting not suitable in very hot humid weather!
