,%20we%E2%80%99ve%20been%20preparing%20our%20tastebuds.%20It%E2%80%99s%20been%20a%20summer%20full%20of%20Chile-Lime%20Salmon%20and%20margaritas.%20When%20our%20Jadot%20wine%20(the%20full%20brand%20name%20is%20Maison%20Louis%20Jadot%20M%C3%A2connais%20and%20Beaujolais,%20which%20you%20should%20probably%20not%20bother%20trying%20to%20say%20after%20a%20glass%20or%20two)%20came,%20I%20knew%20I%20wanted%20to%20break%20into%20shrimp%20taco%20territory.%3C/p%3E%3Cp%3EMaison%20Louis%20Jadot%20Wines%20are%20the%20%231%20French%20brand%20of%20wines%20in%20the%20United%20States%20and%20the%20M%C3%A2con-Villages%20Chardonnay%20immediately%20stood%20out%20to%20me%20as%20the%20perfect%20choice%20for%20a%20special%20summer%20moment.%20It%E2%80%99s%20a%20dry%20wine%20with%20a%20citrusy%20scent%20ideal%20for%20pairing%20with%20seafood%20or%20big%20fresh%20salads.%20I%20made%20these%20delicious,%20spicy%20chipotle%20shrimp%20tacos%20with%20pico%20de%20gallo%20and%20a%20tangy%20white%20sauce%20to%20enjoy%20with%20the%20wine.%20The%20shrimp%20is%20cooked%20with%20a%20bit%20of%20the%20wine%20as%20well%20%E2%80%94%20my%20favorite%20trick%20for%20making%20a%20perfect%20pairing%20even%20more%20ideal.%20Sitting%20with%20Mike%20eating%20shrimp%20tacos%20and%20drinking%20Chardonnay%20%E2%80%94%20even%20if%20we%20were%20sitting%20on%20the%20floor%20in%20the%20middle%20of%20our%20disaster%20of%20a%20living%20room,%20using%20the%20coffee%20table%20as%20our%20dining%20table%20%E2%80%94%20made%20summer%20feel%20a%20little%20more%20real%20for%20us.%3C/p%3E%3Cp%3EWhat%20makes%20summer%20feel%20like%20summer%20to%20you?%3C/p%3E%3Cp%3E1%20cup%20mayonnaise%201/4%20cup%20milk%204%20tablespoons%20lemon%20juice%201%20teaspoon%20garlic%20salt%203/4%20medium%20red%20onion,%20diced%20(you%20should%20end%20up%20with%20about%201%20cup)%204%20Roma%20tomatoes,%20diced%202/3%20cups%20chopped%20fresh%20cilantro%20leaves%201%20jalape%C3%B1o,%20seeded%20and%20diced%20very%20finely%20lime%20juice%20from%20one%20small%20lime%20salt,%20to%20taste%201/2%20(7-ounce)%20can%20chipotle%20peppers%20in%20adobe%20sauce%201%20pound%20large%20shrimp,%20deveined%20with%20tails%20and%20shells%20removed%201%20tablespoon%20minced%20garlic%203%20tablespoons%20olive%20oil%20salt,%20to%20taste%202%20tablespoons%20fresh%20lime%20juice%202%20tablespoons%20Maison%20Louis%20Jadot%20M%C3%A2con-Villages%20Chardonnay%202%20tablespoons%20unsalted%20butter%20thinly%20shredded%20Napa%20cabbage%20lime%20juice%20fresh%20cilantro%20queso%20blanco%208%20corn%20tortillas%3C/p%3E%3Cp%3EMake%20white%20sauce:%20Whisk%20together%20mayonnaise,%20milk,%20lemon%20juice,%20and%20garlic%20sauce.%20Stick%20in%20the%20refrigerate%20to%20chill%20and%20let%20the%20flavors%20meld%20for%20at%20least%20a%20half%20hour.%20Make%20the%20pico%20de%20gallo:%20Toss%20tomato%20and%20onion%20together%20with%20the%20finely%20diced%20jalape%C3%B1o%20and%20cilantro%20in%20a%20medium%20bowl.%20Add%20the%20lime%20juice%20and%20salt%20(remember%20you%20can%20always%20add%20more%20but%20can't%20take%20it%20away,%20so%20start%20small).%20Mix%20and%20taste,%20adjusting%20the%20amounts%20of%20salt,%20lime,%20and%20jalape%C3%B1o%20as%20needed.%20Set%20aside%20in%20the%20fridge%20for%20at%20least%20a%20half%20hour,%20tossing%20occasionally.%20I%20then%20pulsed%20mine%20through%20a%20food%20processor%20a%20few%20times%20because%20I%20like%20a%20finer%20pico%20de%20gallo%20on%20my%20tacos.%20Warm%20the%20tortillas:%20Preheat%20the%20oven%20to%20350%20degrees%20F.%20Wrap%20two%20stacks%20of%204%20tortillas%20each%20in%20aluminum%20foil%20and%20warm%20them%20for%2015-20%20minutes%20or%20until%20soft%20and%20warm.%20Make%20the%20Chipotle%20Shrimp:%20Process%20the%20chipotle%20peppers%20and%20sauce%20in%20a%20food%20processor%20until%20smooth.%20Place%20the%20puree,%20shrimp,%20and%20garlic%20together%20in%20a%20zip-top%20bag%20and%20gently%20work%20the%20bag%20around%20until%20the%20shrimp%20are%20well%20coated.%20Place%20the%20shrimp%20in%20the%20refrigerator%20for%2020%20minutes%20to%20marinate.%20Heat%20the%20olive%20oil%20in%20a%20large%20skillet%20over%20medium%20heat%20until%20it%20shimmers.%20Pour%20the%20shrimp%20and%20sauce%20out%20into%20the%20prepared%20skillet.%20Sprinkle%20with%20salt,%20lime%20juice,%20and%20wine.%20Cook%20for%20around%204%20minutes,%20tossing%20the%20shrimp%20as%20needed,%20until%20the%20shrimp%20are%20cooked%20through.%20Remove%20from%20the%20heat%20and%20gently%20mix%20in%20the%20butter.%20Assemble%20the%20tacos:%20Top%20each%20corn%20tortilla%20with%20three%20chipotle%20shrimp,%20a%20spoonful%20of%20pico%20de%20gallo,%20some%20shredded%20cabbage,%20a%20spritz%20of%20lime%20juice,%20fresh%20cilantro,%20queso%20blanco,%20and%20a%20drizzle%20of%20white%20sauce.%20Serve%20immediately.%20%203.2.2925%3C/p%3E){kind=link}
