Chinetown chicken salad


  • 50 g wonton wrappers
  • veg oil for frying wontons
  • dressing
  • 1 red chilli deseeded and finely chopped
  • 2 tsp chopped fresh ginger
  • 4 tsp lime juice
  • 3 tbsp soy sauce
  • splash seseame oil
  • 1/2 tsp sugarfor the salad
  • 50 g salted chopped into pieces peanuts
  • 1 head iceberg lettuce, shredded
  • 4 spring onioins cut into thirds and julienned
  • 1 red pepper deseeded and cut into fine strips
  • 3-4 cups shredded cooked/cooled chicken loosely packedchopped parsley,basil,dill in any combo

Chinetown chicken salad

  1. Heat the oil and fry the wonton being careful as they cook fast and still cook after being taken out of oil, place on tray covered in paper towel to drain
  2. cook in batches until you have a sheet ful of the squares
  3. mix the dressing shaking to mix
  4. in a large bowl toss the peanuts, lettuce, onion, pepper and cold chicken add half the cooled wonton breaking them into pieces, then dress the salad tossing again to mix before adding the other half of the broken wrappers sprinikle with herbs before serving
